Quick Quiche

This is a quick quiche made with a very light pastry which melts in your mouth and doesn’t need to be baked blind. If you’re cooking for one, this mixture is delicious made into individual-sized quiches using deepish old saucers or 10cm/4 inch quiche pans or glass dishes. Use half these ingredients to make one quiche, or make two and freeze or keep one for later. Bake these quiches for about 20 minutes.

Serves 2–4 as a main meal

125g/4oz/¾ cup + 2tbsp self-raising wholewheat flour or a half-and-half mix of white and wholewheat self-raising flour

½ tsp salt

65g/2½oz/5tbsp butter
